3# French Green beans

8oz butter

3q water

2c almonds, sliced and toasted

4 oranges segmented

salt and pepper to taste

Preparation

  1. In a saute’ pan, cook butter until brown with nutty aroma
  2. strain through coffee filter to remove burnt butter solids
  3. wash beans, snip stem ends
  4. Bring water to boil, cook beans until tender 5. when ready, strain water, add braown butter and almonds
  5. season with salt and pepper. Garnish ith Orange segments.
