Ingredients
1 lb slender green beans trimmed
2 TBL Japanese white sesame seeds
2 1/2 inch piece fresh ginger chopped fine
1 TBL Japanese soy sauce
1 TBL Mirin
3 tsp Sugar
1 tsp sesame seeds extra for garnish
Preparation
Blanch beans for 2 minutes and plunge into ice bath
Toast the sesame seeds in dry frying pan for 5 minutes until golden. Pound seeds in mortar and pestle or mini food processer until paste is formed.
Combine paste with ginger, soy, mirin and sugar. Pour sauce over beans and scatter extra sesame seeds.
