Ingredients

1 lb. green beans trimmed

1/4 cup hazelnuts, toasted and coarsely chopped

2 tbsp extra virgin olive oil

3 tbsp chopped fresh mint or parsley

1 clove garlic, minced

2 tp lemon juice

generous pinch cayenne pepper

1/2 tp salt or more to taste

Preparation

Blanch green beans inboiling water for 3 mnutes. Drain, rinse with cold water and pat dry. Place in salad bowl combine oil with lemone juice and spices/garlic Just before serving, toss beans and sprinkle with hazelnuts.
