Ingredients
2 1/2 lbs string beans, trimmed
4 T vegetable oil
1/4 cup minced ginger
4 garlic cloves minced
Preparation
- Blanche the beans (2 minutes or more to taste). Plunge in cold water, drain. Recipe can be made up to this point the day before and kept refrigerated.
- When ready to cook, heat 2 T oil in skillet over high heat. Add half the beans, ginger and garlic. Cook stirring and tossing constantly until the beans are heated through and ginger/garlic are soft and aromatic. Sprinkle with salt, remove to serving dish. Repeat with remaining beans etc.
