Ingredients

3 chicken breats - Season with garlic, lime, chile powder, salt and pepper and brown in olive oil then dice

2 potatoes diced

2 zucchini diced

1 white onion diced

5 cloves garlic minced

1 red bell pepper

2 carrots diced

6-7 charred green chiles peeled and diced (if you don’t want it to be too spicy, remove seeds.)

1 jalepeno diced

1 tsp cumin

1 tsp chile powder

1 tbs lime juice

salt and pepper

4 cups chicken stock

Garnish:

avocado

cilantro

queso fresco

lime juice

Preparation

In a large pot heat 2 tbs olive oil. Saute the potatoes for 5 minutes then add the rest of the veggies and the spices. When they are soft add garlic, diced chicken, lime juice and 4 cups of chicken stock. Cover and let simmer for 30 minutes. Adjust salt and pepper as needed. Serve with queso fresco, chopped cilantro, diced avocado and lime.
