Ingredients
1/2 ripe med avocado (7 oz)
3 T white wine vinegar
1 garlic clove, finely chopped
1 oil packed anchovy, very finely chopped
1 t fresh lemon juice
1/2 t fresh lime juice
1/4 t sugar
3/4 c olive oil
1/4 c heavy whipping cream
3 T chopped fresh Ital parsley
2 T chopped fresh tarragon
2 T chopped fresh cilantro
1 T chopped fresh basil
1 small shallot, finely chopped (~1 T)
Preparation
Blend first 7 ingredients in processor until coarse puree forms. Wtih machine running, gradually add oil thorugh feed tube; blend well. Transfer mixutre to bowl; whisk in cream. Add parsley, tarragon, cliantro, basil, and shallot; whisk to combine. Season dressing to taste with salt and pepper. Cover and chill at least 3 hrs. Let stand at room temp 20 min and rewhisk before serving.
