Ingredients

1 1/2 dozen x-large shrimp (peeled with tail left on)

1 bunch cilantro

1 cup olive oil

1 lime, juice and zest

1 garlic clove finely chopped

salt and pepper

Preparation

Preheat oven to 375 degrees. Place prepared shrimp in large flat bowl. Put remaining ingredients in food processor and pulse till well blended and cilantro is in fine pieces. Pour over shrimp and let marinate for 20 minutes, not longer. Lay shrimp out in a single layer on a baking sheet and bake for 10 minutes or until firm. Seve at room temperature.
