Ingredients

3 lbs Green tomatoes

8 Onions

2 Cucumbers

1 Green Pepper

1 Red Pepper

2 lbs Sugar

2 pints Malt vinegar

2 tbsp Flour

2 tbsp Curry powder

1 tbsp Mustard powder

Salt

Preparation

1 - Cut / mince all veg finely. 2 - Spinkle with 1 tbsp salt & stand overnight. 3 - Drain off most of the liquid. 4 - Place in a large pan with the sugar & vinegar, bring to the boil & simmer for 1 hour. 5 - Blend the flour, curry powder & mustard powder with a little of the vinegar & add to the pan. Mix and simmer for 30 mins. 6 - Pour into warm, sterilized jars & seal.
