Ingredients

2 Dozen Large Green Tomatoes, chopped

8 Yellow Onions, chopped

2 Red Peppers, chopped

2 Green Peppers, chopped

5T Salt

Brine:

5 Cups Cider Vinegar

4 Cups White Sugar

4 teaspoons Celery Seed

4 teaspoons Mustard Seed

Preparation

Chop green tomatoes, onions and peppers and mix together (I used to shred in Cuisinart). Soak overnight with 5T salt. Drain and make brine.

Boil brine and relish for 1/2 hour. Put into jars and seal.
