Ingredients
100g sultanas
75ml dark rum
175g plain flour
2tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
125g melted butter
150g light brown sugar
2 large eggs
3 large or 4 small very ripe bananas
60g walnuts (optional)
1tsp vanilla extract
2 inches of cinnamon stick - ground up
2 cloves - ground up
1/2 a nutmeg - ground up
Preparation
Set oven to 170 celsius. Butter and flour a baking tin.
Put sultanas in the rum - and either zap in the microwave until boiling, or bring to boil in a small pan. Then leave them for at least an hour.
Mix all the dry ingredients in a bowl.
Mix melted butter, sugar, eggs, vanilla and rum. Mash bananas roughly - then mix those in too. Add the sultanas and rum.
Mix wet ingredients into dry ingredients - but don’t mix too well.
Put in the baking tin. Sprinkle with a bit more brown sugar (demerera or ‘cassonade’ in French - is best).
Bake for 1 - 1 1/4 hours. Test with a skewer at 1 hour and if it comes out cleanly, it’s done.
