Ingredients

2 slices whole grain bread

1 small red tomato, sliced

5-6 basil leaves

1 tbsp. mayonnaise

3 tbsp. shredded, OR two slices, italian cheese such as provalone, pecorino, mozzarella, or parmesan

1-2 tbsp. bacon grease

Preparation

Heat bacon grease on medium heat in skillet. Lightly toast bread slices in toaster until warm and slightly crisp but not brown. Spead mayo on one slice, add tomato slices and basil leaves and sprinkle cheese evenly over everything. Close sandwich with other slice of bread and brown in covered skillet until cheese is melted, flipping once. Serve immediately.
