Ingredients
4 Boneless Skinless Chicken Breasts
1 Pound Baby Spinach cleaned
1 Can mandarin oranges
1/2 Cup Dried Cranberries
1/4 Cup Sunflower Seeds
1/2 Cup Shredded Parmesan Cheese
1/2 Pint Cherry Tomatoes
1/2 Pound Fresh Sliced Mushrooms
1 Small Red Onion Cut Into Rings
Dressing:
1/4 Cup red wine vinegar
1 teaspoon sugar
3 tablespoons soy sauce
1 teaspoon grated ginger
1/2 teaspoon lemon juice
1/4 teaspoon minced garlic
Preparation
Grill Chicken Breasts and cut into strips. Place cleaned Baby Spinach into salad bowl. Layer chicken, mandarin oranges, dried cranberries, and sunflower seeds. Top salad with onion, mushrooms, shredded parmesan cheese and tomatoes.
Combine all ingredients and shake well. Dress salad just before serving and toss well.
