Ingredients

6-8 boneless chicken breasts

Romaine lettuce

red onions

ripe tomatoes

hot or sweet Italian peppers

fresh mushrooms

olive oil

salt

fresh ground black pepper

crusty Italian bread or rolls

Preparation

Cook the chicken breast (I blanch mine) the day before. Refridgerate over nite. Slice all of the veggies and the chicken breast. To make the sandwiches—brush the inside of the bread and season with salt and pepper. Place the chicken,onions,lettuce,peppers, tomatoes and mushrooms on the bread. Top with other slice or top of roll. Brush one side with olive oil–place that side down on the grill. Now brush the other side with olive oil while it’s grilling. Season lightly. Grill on low about 4-5 minutes on each side. Serve with a side of Marinara sauce and enjoy!!!
