Ingredients
Mango Salsa:
1 cup mango juice
1 tbsp minced fresh ginger
3 large ripe mangos chopped
4 green onions chopped
1 large red bell pepper, chopped
2 tbsp fresh cilantro, chopped
1/3 cup lime juice
2 tbsp crystallized ginger, chopped*
2 tbsp dried mango, chopped*
1 serrano pepper, seeded, pithed and chopped
kosher salt
pepper
Chicken:
4 boneless chicken breast halves
favourite seasoning
*Crystallized ginger and dried mango can be found easily in Asian groceries
Preparation
- Combine mango juice and fresh ginger in a small sauce pan and reduce juice to 1/2 of volume (put aside to cool)
- Combine rest of mango salsa ingredients. If increasing volume of serrano peppers keep in mind that the heat in this recipe builds quickly over time. (Pain is not a flavour) Add salt to taste.
- Add mango reduction to mixture
- Season chicken with favourite seasoning (I usually use cajun spices or herbs de Provence) and grill until done
- Serve chicken on bed of mango salsa
