Ingredients

Mango Salsa:

1 cup mango juice

1 tbsp minced fresh ginger

3 large ripe mangos chopped

4 green onions chopped

1 large red bell pepper, chopped

2 tbsp fresh cilantro, chopped

1/3 cup lime juice

2 tbsp crystallized ginger, chopped*

2 tbsp dried mango, chopped*

1 serrano pepper, seeded, pithed and chopped

kosher salt

pepper

Chicken:

4 boneless chicken breast halves

favourite seasoning

*Crystallized ginger and dried mango can be found easily in Asian groceries

Preparation

  1. Combine mango juice and fresh ginger in a small sauce pan and reduce juice to 1/2 of volume (put aside to cool)
  2. Combine rest of mango salsa ingredients. If increasing volume of serrano peppers keep in mind that the heat in this recipe builds quickly over time. (Pain is not a flavour) Add salt to taste.
  3. Add mango reduction to mixture
  4. Season chicken with favourite seasoning (I usually use cajun spices or herbs de Provence) and grill until done
  5. Serve chicken on bed of mango salsa
