Ingredients

4 garlic cloves, peeled–small cloves

2 cups grape tomatoes

3 cups uncooked penne pasta

3 cups chicken broth

3/4 cup white wine

1/2 teasp each of salt and pepper

1 and 1/4 cups basil–loosely packed, divided

1 oz. parm. cheese (1/4 cup packed)

2 cups diced grille chicken breasts

Preparation

saute garlic and tomatoes in olive oil until tomatoes pop– crush tomatoes

add pasta, chicken broth, wine, salt and pepper

cook until pasta is tender

chop basil coarsely (reserve 2 tablespoons for garnish)

add remaining basil, cheese and chicken and mix well
