Ingredients
1/2 C pecans, toasted (400 for 5 mins)
1/4 C plain yogurt unsweetened
2 T fresh lemon jiuce
1 small garlic clove, finely grated
1/4 C olive oil, plus extra for pan
S/P
1 lb chicken tenders
1 bag romaine, washed and cut
1/2 C grated Parmesan cheese
Double dressing for 3
Preparation
Whisk yogurt, lemon jiuce, garlic, S/P, and oil in small bowl until blended Put chicken in small dish and coat with 3T dressing Generously brush grill pan with olive oil and heat over high heat for 2 mins. Cook chicken for about 5 mins turning once Put romaine on plate and top with chicken, nuts, cheese, and dressing
