Ingredients

refrigerated grilled chicken

1/2 Garlic clove

Roasted red pepper (jar)

Thyme

Salt

Pepper

Olive oil

Red wine vinegar

Goat cheese

Spinach leaves

Preparation

Heat grilled chicken in skillet add pepper, thyme and seasoning to taste. Drain and wash red pepper. In a bowl mix chopped red pepper, minced garlic clove, salt, pepper, olive oil& red wine vinegar. This is the “dressing.” Place grilled chicken on a bed of spinach leaves, add contents in bowl, and top with crumbled goat cheese.
