Ingredients

–1/8+ cup olive oil

–Finely grated lemon zest

–1 tablespoon lemon juice

–1 tablespoon thyme leaves

–1 garlic clove, minced

–salt & freshly ground pepper

–Sliced tomato

–1/2 lb. chicken breast

–Fresh mozzarella

–Basil leaves

–Ciabatta bread, petite size, par baked (TJs)

Preparation

  1. In large bowl, whisk olive oil, lemon zest & juice, thyme, garlic, salt and pepper. In 2 separate containers, use the mixture as marinade over the chicken and over the tomatoes. Let stand at room temp for 30 min.
  2. Light grill or heat stovetop skillet. Add a little olive oil. Brush ciabatta with olive oil & grill, if desired. Or put ciabatta in oven to bake. You only need 1/2 of the petite loaf for 2 sandwiches.

Add chicken to grill and cook over high heat, turning once, until cooked through and lightly charred, about 6 min utes. Slice baked ciabatta into two sandwiches and place chicken on top. Top w/ mozzarella, tomato and basil. Spoon any tomato or other juices on top. Close sandwich.
