Ingredients
Chicken:
4 boneless, skinless chicken breasts
Chicken seasoning; dry rub (store bought)
Sauce:
4 slices of proscuitto
1 glove of garlic, diced
1/2 cup chicken broth
2 tbs of butter
Preparation
Chicken: Wash and towel dry the chicken, then rub in the seasoning to your desired amount of flavour. On your griddle spray non-stick cooking spray and place chicken on it, cooking it on each side 3-4 minutes or until white on the inside.
Sauce: On a pan melt the butter and break up the prosciutto, letting it crisp up in the pan. After crisping it add the garlic and let that cook until the garlic is tender. De glaze the pan with the chicken broth, letting that thicken up until desired consistency. Pour sauce over chicken and viola!
Possible side: Steamed broccoli tossed with garlic and olive oil
