Ingredients

2 5oz salmon filets

1 carrot julliened

1 head romaine lettuce

1 sweet onion

2 lemons

1 orange

olive oil

2 T minced garlic

2 T minced ginger

1/4 cup rice wine vinegar

1 t 5 spice powder

Preparation

Prepare marinade by combining lemon and orange juices and zest,vinegar,olive oil garlic,ginger and 5 spice in a small bowl. Whisk until well combined. remove 1/4 cup of marinade and set aside for dressing. Marinate salmon for 1 hour. Preheat grill and slice onions 1" thick. Brush onions with olive oil and salt and pepper and place over heat until lightly charred. Cook salmon over moderate heat about 4 minutes per side. Wash and chop lettuce. Add 2 T oil to reserved marinade to make a dressing, whisk until well combined. Place lettuce on the plate and cover with a bed of onions and salmon filet. drizzl dressing over top and serve with lemon wedges.
