Ingredients

1 lb. mesculin greens

10 cherry tomatoes(sliced in half)

1 cup crumbled goat cheese

1 Italian eggplant

5.5 oz. olive oil

3.5 oz. balsamic vinegar

1/2 tsp. Kosher salt

Preparation

In mixing bowl start with balsamic vinegar and slowly add olive oil while stirring with a whisk. Add greens, cherry tomatoes and goat cheese. Mix all ingredients togethor well. Place in serving dishes. Slice the eggplant into 1/4" thickness and brush with extra virgin olive oil and a touch of Kosher salt and then grill for a few minutes on each side. Finish the salad by placing grilled eggplant on salad.
