Ingredients

1 tsp dried italian herb blend

1/4 evo

1 tsp fresh lemon juice

1/4 cup toasted pine nuts

1/3 cup evo

1 tbs soy sauce

1 tsp minced garlic

1 large eggplant

10 oz crumbed feta with herbs

Preparation

Mix herbs, 1/4 evo, lemon jucice and pine nuts, toasting nuts in a small skillet over medium heat. wisk together 1/3 cup evo, soy sauce, and garlic. SLice eggplant 3/4 inch thick. Brush with second mixture liberally. grill 2 to 3 minutes a side, arrange on warm platter, sprinkle feta over eggplant and spoon herb/pine nut mixture over top, serve warm
