Ingredients
2 - 3 red bell peppers, chopped
2-3 cloves garlic, chopped
3 boneless chicken breast, grilled w/garlic powder & pepper, chopped
1 bunch broccoli
1-3 Tb balsamic vinegar
1/4-1/2 cup light olive oil
black pepper
garlic powder
garlic salt
1 sm box Penne pasta
¼ - ½ cup grated fresh parmesian or romano cheese
Preparation
Grill chicken sprinkled with garlic powder and black pepper. Roast red peppers and garlic drizzled with balsamic vinegar and sprinkled with garlic salt in olive oil for about ½ hr at 350. Cut broccoli into florets and steam until tender Boil pasta as directed
Put pasta in a large bowl, mix with pepper/garlic mixture including the olive oil, broccoli, and chicken. Sprinkle with cheese and serve with garlic bread and salad.
