Ingredients
4 6oz Halibut Filets
2 T Flour
2 T Olive Oil
Sauce
1 Medium Tomato, diced (not too small)
1 T Capers
1 T Lemon juice
Salt & Pepper
Preparation
Combine all ingredients for the sauce and set aside. Heat oil in a non stick pan to about a medium temperature. Lightly dust the filets with flour and add to the oil, cooking for about 2 to 3 minutes on each side or until done. Heat another non stick pan and add the tomato mixture tossing for about 30 seconds, just enough to heat. Spoon over the filets.
