Ingredients

SPICY HERB RUB

1/4 cup dried parsley

2 tablespoons dried thyme

2 tablespoons dried marjoram

1/2 teaspoon salt

1/2 teaspoon crushed red pepper flakes

FISH

1 1/2 lb. mahi mahi fillets

1 tablespoon olive oil

1 tablespoon fresh lemon juice

Preparation

  1. Heat grill. In small bowl, combine all rub ingredients; mix well. Brush mahi mahi with oil; place in shallow baking dish. Pat rub onto both sides of fish, using a total of 2 tablespoons of rub. Cook fish immediately or chill 30 minutes to allow flavors to blend.
  2. When ready to grill, place fish skin side up on grill over medium-high heat.
  3. Cook 8 to 10 minutes or until fish just begins to flake, turning once. Sprinkle with lemon juice before serving.
