Ingredients

5 tablespoons olive oil

3 tablespoons lemon juice

1/2 teaspoon tabasco sauce

1/2 teaspoon thyme

3/4 pound chicken breast half without skin

1 medium red onion

1/2 head romaine lettuce

1/2 cup feta cheese

Preparation

  1. Flatten chicken breast halves to no more than 1/2 inch thick

  2. Whisk olive oil, lemon juice, pepper sauce and thyme. Season with salt and pepper. With 2 tablespoons of the marindate, marinate chicken breasts for at least 30 minutes (and no more than 4 hours)

  3. Warm remaining dressing

  4. Grill chicken and onion slices, ~4 minutes per side.

  5. Separate onion rings, slice chicken. Arrange over lettuce and sprinkle with feta
