Ingredients

2 tbs finely minced lemongrass

1 tsp fish sauce

2 tsp soy sauce

2 tsp light brown or turbinado sugar

2 tsp minced garlic

Juice of 1/4 lemon (about 1 tbsp)

2 tbsp canola oil

1-1/2 - 2 lbs boneless chicken thighs, lightly pounded to even out thickness

Preparation

Combine all marinade ingredients in a mixing bowl, add the chicken, and marinate about 20 minutes. You can marinate up to an hour, but no longer, as the acid in the lemon juice will break down the chicken. Grill for 3-5 minutes per side.
