Ingredients
12 ripe jalapenos
1/2 pound of cheddar cheese
1/4 pound of thinly sliced bacon
1 avocado
1/2 cup fresh cilantro
juice of half of a lime
1/4 small red onion
Preparation
- remove tops from avocados and carefully remove seeds.
- add one diced avocado, cilcantro, lime and onion to a bowl and mix into a smooth consistency.
- add a teaspoon of avocado mixture into the jalapeno. pressing all the way in.
- slice cheese into sticks that fit into each avacado and place inside each jalapeno, pushing all of the way in.
- cut bacon in half and place middle of slice over opening in the jalapeno. wrap both sides down to the bottom and secure with toothpick.
- grill on med-low heat rotating every 5 minutes until bacon is cooked.
- remove toothpick sna eat.
