Ingredients
2 lbs. pork tenderloin, cut into 3/4" medallions
1/4 cup blackberry syrup*
1/4 cup olive oil
1/3 cup white wine
2 tablespoons Dijon mustard
2 tablespoons balsamic vinegar
1/2 teaspoon soy sauce
2 medium cloves garlic, crushed
2 dashes cayenne pepper
1/4 teaspoon black pepper
1 teaspoon chopped fresh rosemary
Preparation
Whisk marinade ingredients together in large bowl until thoroughly combined. Add the pork medallions and let marinade in refrigerator for 1-2 hours.
Prepare grill.
Grill pork medallions on preheated gas grill (or over glowing coals on a charcoal grill) until just cooked through, approximately 5 minutes on each side.
