Ingredients
4 medium potatoes (Yukon Gold preferred, others are good, too)
1/4 cup Extra Virgin Olive Oil
4 Tbsp Thyme or other preferred fresh herbs, minced
Sea Salt or Kosher Salt to taste
Fresh ground pepper to taste
Preparation
Prepare the grill while prepping the potatoes. Wash potatoes thoroughly. Do not peel. Slice potatoes into 1/8 inch, round slices. Working in batches, spread slices onto prep surface (cutting board, plates, etc). Brush exposed side with olive oil, then sprinkle some herbs, salt and pepper on the slices; turn slices over and repeat. Use some of the olive oil to brush the hot grill. Spread potatoes evenly over grill surface. Grill until desired doneness is achieved, turning and moving slices periodically during cooking.
