Ingredients

For the salsa:

1 navel orange, 1 lemon and 1 lime each peeled and cut into segments

2 Roma tomatoes, diced

1/2 Red Bell pepper

2 cloves of garlic, minced

1/4 red onion, diced

1 jalapeno pepper, minced

1/4 cup cilantro, chopped

Kosher salt and fresh ground pepper

Salmon:

6 salmon steaks

4 tablespoons olive oil

Kosher salt and pepper to taste

1 tablespoon of butter

Preparation

Combine ingredients for salsa in a bowl and refrigerate for 2 hours Season salmon steaks and prepare with olive oil in hot ribbed grill pan for 3 minutes on each side, finish in 300 degree oven for 3 minutes - combine remaining bits in grill pan with 1 tablespoon of butter and pour over salmon just before serving Serve with citrus salsa - serves 4
