Ingredients

1/4 c. low fat plain yogurt

1/4 c. chopped parsley

1/4 c. chopped cilantro

2 TBS. lemon juice

1 TBS. extra virgin olive oil

3 gloves garlic minced

1 1/2 Tsp. paprika

1 tsp. ground cumin

1/4 tsp. salt or to taste

ground pepper to taste

1 lb. center cut salmon fillet

cut into 4 portions

1 lemon cut in wedges

Preparation

1.Stir together yogurt, parsley, cilantro, lemon juice, oil, garlic, cumin, salt, pepper (keep in frig til ready to use)

  1. Reserve 1/4 cup for sauce.

  2. Place salmon fillets in plastic bag. Pour in the herb mix, seal the bag, turn to coat. Refrigerate 20-30 minutes turning the bag once.

  3. Oil grill. Remove excess marinade. Grill salmon 4-6 minutes til done.

  4. Top each piece with dollop of reserved sauce and garnish with lemon wedge.
