Ingredients

Butter:

-2 large ripe tomatoes, quartered

-1 garlic clove

-1 sprig basil

-4 sprigs parsley

-2 shallots thinly sliced

-1/2 carrot, thinly sliced

-1 cup white wine

-3 tbls red wine vinegar

-1 teaspoon tomato paste

-6oz softened unsalted butter

Salmon:

-4 salmon fillets

-white pepper

-basil leaves for garnish

Preparation

Make Butter:

-Put tomatoes, garlic, basil, parsely, 1 shallot, carrot in food processor; puree and transfer to bowl -In saucepan, cook remaining shallot with wine and 2tbls of vinegar; simmer and reduce; stir in reserved puree and cook another 20 min; add tomato paste

-Whisk in butter, in pieces over low heat; strain sauce into another saucepan; grill salmon; pour sauce on each plate with salmon on top; put basil on top of salmon
