Ingredients
For sardines:
8 fresh sardines, deboned and filleted by your fishmonger
1 small shallot, minced
1 large garlic clove, minced
1/4 cup lemon juice (regular or meyer, or a combo)
3 tbsp olive oil
salt and pepper
Chopped parsely
For salad:
4 cups fresh arugula
20 pitted Kalamata olives, halved
3 tbsp lemon juice
2 tbsp olive oil
salt and pepper
Preparation
Make marinade: Whisk all marinade ingredients together Marinate fish 1-4 hours in refrigerator
Make salad: Combine arugula and olives. Whisk remaining ingredients together and dress while fish is cooking.
Grill fish: Grill fish over hot coals or at medium high on gas grill for 3 mins per side. Place grilled fish over salad and garish with parsley.
