Ingredients
1 lb Sea Scallops
1 ripe papaya, diced
1/2 medium red onion, chopped
1/4 cup cilantro, chopped
2 tbsp lime juice
1 clove garlic, minced
1/8 tsp pepper
2 tsp vegetable oil
Preparation
Rinse scallops and pat dry;set aside. In a medium bowl, combine papaya, red onion, garlic, cilantro, 1 tbsp lime juice, and pepper. Mix gently to avoid mashing the papaya. Cover and refrigerate. Place scallops in a separate bowl. Remove adductor muscle if necessary. Add 1 tbsp lime juice and toss to coat well. Heat grill to 450 degrees. Grill scallops until opaque, 3-4 minutes per side, or until done, turning as necessary. Serve on a bed of salsa.
