Ingredients

32 large shrimp, pre-cooked

Coating:

1 c. shredded coconut

1/4 c. olive oil

1 c. bread crumbs

2 minced garlic cloves

1/4 c. chopped fresh parsley

1/2 lemon, juiced

1 t. salt

1 t. pepper

Salsa:

1 mango

1-15 oz. can mixed tropical fruit, cut smaller

2 T. cilantro, minced

1 scallion, chopped

1/2 lime, juiced

1 jalepeno, seeded and diced

Preparation

Soak 8 skewers in water 30 minutes. Place coconut on baking sheet and bake at 350 for 10 minutes or until brown. Remove and cool 5 minutes. Place shrimp in oil and toss to cover. Combine coating ingredients and coat each piece well. Chill 30 minutes. Preheat grill to high. Thread shrimp on skewers and grill 2 minutes each side. Serve with salsa.
