Ingredients

6 boneless chicken breast halves

3 tbs dijon mustard

5tbs fresh or 3tbs dried tarragon

Juice of 5 lime or 3 large lemons

Preparation

With mallet pound chicken breast between sheets of plastic wrap. In a small bowl combine mustard, tarragon, and juice and mix well with a fork. Brush mustard mixture on each cutlet. Grill about 4 minutes on each side.
