Ingredients
2 lbs Thresher Shark steak, cut into 1 inch cubes
MARINADE:
Juice of 1 Lemon
Juice of 1 Lime
1/2 cup Soy Sause
1/2 cup Orange juice
1 tsp Five Spice Pouder
1 tsp Sugar
1 tsp cornstarch
fresh ground Black Pepper to taste
SAUSE:
1 large Mango, cut up
1 Papaya, cut up
1 Sweet Onion, cut up
1 bunch Cilantro, chopped
1/2 cup Soy Sause
1/2 cup Orange Juice
1/4 cup Honey
1/4 cup Rice Vinager
fresh ground Black Papper to taste
ON THE SIDE:
20 spears Asparagus
1 Sweet Onion, frenched
Preparation
Mix the Marinade ingredients in a mediun sized bowl. Wisk to encorporate Corn Starch.
Slice the Shark and set aside in the Marinade as you make the sause.
For the sause: Everything goes into the food processor. Blend until smooth.
Remove the Shark from Marinade and pat dry. Place the slices on a hot grill or grill pan. This will go fast, so don’t walk away. About 1 minute per side.
Set the cooked fish aside and place the onions and asperagus on the grill. Again, this is only for a minute.
Devide the Shark, onion and asparagus evenly to four plates. Top with sause and serve with white rice.
