Ingredients

1 Tri Tip Roast

3 Limes

3 Chile Chipotles en Adobo

1/2 Cup of Pico de Gallo

Preparation

Slice roast into 1 inch thick steaks across the grain and place in bowl. Fresh grind black pepper onto beef. Juice 3 limes and put juice and limes onto the beef along with the chile chipotles and some of the adobo sauce. Then pour in the pico de gallo. Marinate for around an hour. Then grill rare.
