Ingredients
1 tbsp extra-virgin olive oil
1/2 red bell pepper, finely diced
1/2 green bell pepper, finely diced
1/2 medium yellow onion, finely diced
1 small red onion, thinly sliced
2 tbsp balsamic vinaigrette
1 1/2 lb ground turkey breast
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
4 whole-wheat buns
Preparation
Preheat grill to high heat and oil the grate well. In a medium saucepan, heat the olive oil and saute the red and green bell peppers and yellow onion until they are soft. Transfer the mixture to a large bowl and set aside to cool. In the same saucepan, combine the red onion slices with the vinaigrette and cook over medium-low heat until they are very soft and caramelized, about 10 minutes. Set aside. Add the turkey to the sauteed vegetables in the bowl and season with the salt and pepper. Mix and form into 4 patties, each about 1 inch thick. Grill the burgers until they are well marked and cooked through, about 5 minutes per side. Slice the buns in half crosswise and grill or warm them in a toaster oven. To serve, top the burgers with the caramelized red onions and arrange on the buns.
