Ingredients

8 flour tortilla

1 cup refried beans

2 cups monterey jack cheese, grated

2 zucchini

2 red pepper

6 scallion

8 tablespoons salsa verde

1/2 cup Italian salad dressing

Preparation

  1. Cut zucchini, peppers and scallions into sizes for grilling. Marinate in ziploc bag with italian salad dressing.

  2. Grill vegetables.

  3. Assemble burritos with tortillas, refried beans, vegetables, salsa verde and cheese
