Ingredients

1 small cucumber - peeled and diced

1 small red pepper - cut into 1/4’s and seeded

1 small green pepper - cut into 1/4’s and seeded

3 7" pita breads

5 scallions

2 tomatoes - seeded and chopped

olive oil

1/3 c. olive oil

1/4 c. fresh lemon juice

1/4 c. each chopped parsley and fresh mint

1 garlic clove - crushed

2 T. Tahini

salt and black pepper to taste

Preparation

Brush pita, red and green peppers, and scallions with olive oil. Grill over medium heat until pita are crisp, and vegetables are lightly grilled but still crisp.

Large dice grilled peppers and scallion. Break pita into bite sized pieces.

Whisk together 1/3c. olive oil - tahini.

In a large bowl, toss all vegetables and pita pieces with dressing. Season to taste with salt and pepper.
