Ingredients
3 peppers–Red, yellow and orange bell peppers seeded and cut into quarters
1 Red onion, sliced 3/4 inch thick ‘hamburger slices’ or rings
1 lb. Asparagus, large spears, tough ends removed
6-8 Whole garlic cloves, peeled
1 pint Baby portobella mushrooms, whole
1/4 cup Olive oil
1 Tablespoon Kosher salt
1 Tablespoon Freshly ground black pepper
Preparation
Drizzle oil over vegetables, sprinkle salt and pepper, and toss together until well-coated.
Grill over medium heat (350) in grill basket for 20 minutes, toss often during cooking
Arrange on warmed platter and serve with main course
