Ingredients

3 Tsp Olive Oil

2 Tsp Red Wine Vinegar

1/4 tsp Salt

1/4 tsp Coarsely Ground Black Pepper

1/4 Cup Loosely packed fresh Basil Leaves Coarsely chopped

1 Medium Red Pepper Cut Lenthwise stem and seeds discarded

1 Medium Yellow Pepper Cut Lenthwise stem and seeds discarded

4 Small Zucchini and/or Yellow Squash Sliced

Preparation

  1. Prepare Outdoor Grill For covered direct Griling over Medium-High Heat
  2. In Cup mix Oil, Vinegar, salt, pepper, and basil
  3. Place Veggies on Grill Rack. Occasionaly Turn and Brush with herb mixture until done 7-10 minutes
  4. Drizzle veggiesx with any remaining herb mixture and serve
