Ingredients

Marinade

1/4 cup balsamic vinegar

1/4 cup olive oil

2 tablespoons chopped parsley

1/4 teaspoon sugar

black pepper to taste

2 medium sized zucchini

Preparation

Slice off stems and 1/4 inch from zucchini bottoms. Cut each into 4 lengthwise pieces, 1/4 inch wide, place in a glass dish. Combine vinegar oil 1 tablespoon parsley sugar and pepper in a bowl. Mix well and over pour zucchin. Marinate at room temperature for 1 hour turning once. Place zucchini directly on grill 3 to 4 inches from coals cook until done brushing with marinate and turning once. Remove to a platter. Sprinkle with remaining parsley
