Ingredients
2 cloves of garlic chopped
2-3 Tbls of fresh squeezed lemon juice
2-3 Tbls olive oil plus more for grilling zucchini
3 Tbls fresh chopped herbs such as basil, parsley or marjoram
3 Tbls grated Parmesan or Pecorino Romano.
Red pepper flakes and salt to taste
1 Large zucchini sliced into about ¼ inch rounds
Preparation
Pre-heat your grill
Make salad dressing by whisking together the first 6 ingredients
Toss the zucchini slices with olive oil. Grill the zucchini slices on high heat till they are softened and have some nice grill marks.
Toss hot zucchini with dressing and serve.
