Ingredients
½ lb ground lamb
1 medium/1/2 lg. onion, chopped
1 package of hummus
pine nuts
parsley
3 T o’oil
1t ground cinnamon
paprika
lemon wedges
pita/flat bread
Salt/Pepper
Preparation
-Heat o’oil in pan and fry onions until they are golden, ~20 min, set aside with the oil
-Make or get the hummus on a plate
[For some reason this recipe wants you to let the onions cool and kind of start over with them. I wonder if it would be ok to just add the ground lamb? Maybe toast pine nuts during this time.]
-Reheat onions, add ground lamb/onions, add 1 t of cinnamon, when almost done, add salt and pepper. Sauté until the ground lamb is a bit crispy, take off fire, add paprika.
-Pour onion/lamb mix over hummus, sprinkle generously with parsley, add pine nuts.
-Serve w/ toasted pita and lemon wedges
