Ingredients

2-3 strips bacon

2 Tbs. crema or Sour cream

1/2 ripe avocado, pitted and mashed with fork

2 Tbs. goat cheese

3 eggs

1 Tbs. butter

salt & pepper to taste

Preparation

Fry bacon and crumble; set aside.

Mix together avocado paste and crema (or sour cream) and set aside.

In a small bowl, beat eggs until frothy; add 2 Tbsp water or milk and salt and pepper. Heat butter in a non-stick skillet until bubbles form and add eggs. As eggs cook, swirl frying pan to send uncooked eggs to the side of the pan. When eggs are set, flip omelette.

Spread avocado/crema mixture across omelette. Add bacon and goat cheese, and cook for just long enough to slightly brown the bottom of omelette. Fold omelette into thirds and serve.
