Ingredients

Corned Beef

2 Bay leaves

6-8 Peppercorns

1 Quartered Onion

1 Carrot

1 Stalk Celery

1 Cabbage Leaf

2 Cloves of Garlic

5 lbs. Peeled Potatoes -

Carrots in 2" Lengths - as needed

Quartered Cabbage - 1/4 per person

I Bottle of Beer

Preparation

Put the meat and the next 7 ingredients in a large pot filled with water 2" above the meat. (1 bottle of beer can be mixed with the water if desired.) Bring the water to a boil, then simmer covered for 40 minutes per pound.

When there are 45 minutes left to go, add the potatoes and the carrots, in 2" lengths, to the simmering meat. When there are 15-20 minutes remaining add the quartered cabbage.
