Ingredients
1 pkg. frozen haddock, or other white fish
1 tsp. salt
1 T. butter
2 T. water
2 tsp. lemon juice
1 pkg. frozen spinach
1/4 C. butter
2 tomatoes
1 T. horseradish, creamy
2 T. parsley, chopped
Preparation
Cut the frozen haddock on the bias, in finger thick slices. Combine the haddock, salt, water and lemon juice in a saucepan. Cover and simmer the fish on low for about 15 min. Put the frozen spinach and a little butter in another saucepan, cover and cook over low heat. Remove cover and allow some of the water to evaporate. Salt to taste. Put the spinach on a serving dish. Add the fish on top. Cut the tomatoes into small pieces and sprinkle over fish. Pour off any remaining fish stock and brown butter in fish pan, add the horseradish and parsley; mix well. Pour the sauce over the fish.
